Our Approach to Ingredients

At Maternal Reverence, we believe the foundation of exceptional cuisine begins with ingredients selected by tiny, occasionally sticky hands.

Our ingredient sourcing philosophy is guided by Chef Luca's remarkably specific preferences and his unwavering commitment to selecting items based primarily on their visual appeal and "squishability factor." We partner exclusively with local Iowa producers who have demonstrated patience when small children spend upwards of 45 minutes selecting a single egg or examining a radish with unexpected intensity.

While conventional restaurants might prioritize flavor profiles or seasonal availability, our criteria include whether an ingredient can withstand being dropped repeatedly, how it sounds when tapped with a wooden spoon, and whether it maintains structural integrity when subjected to what Chef Luca calls "the squeezy test."

"I pick the best ingredients by squeezing them. If they make a funny noise or squirt juice, those are the good ones. Sometimes I drop them to see if they bounce. The bouncy ones taste better." Chef Luca

Local Sourcing Map

Our ingredient sources are located within a 30-mile radius of Cedar Rapids, though Chef Luca remains convinced that the farm visits involve "super long car trips to different countries."

Note: This map exists only in Chef Luca's imagination, where Iowa is "next to the ocean" and all farms are "past the big tree where we saw that funny dog."

Our Sustainability Practices

Sustainability is central to our operation, though our interpretations of sustainable practices may differ slightly from industry norms.

Creative Repurposing

Under Chef Luca's guidance, food scraps are repurposed into what he calls "art projects" before composting. These sculptures occasionally become unintentional centerpieces when he insists they're "too pretty for the garbage."

Water Conservation

While we did not initially plan a water conservation program, Chef Luca's tendency to turn off taps mid-hand-washing because "the water needs a nap too" has resulted in a 30% reduction in water usage.

Zero-Waste Initiative

Our zero-waste approach is primarily driven by Chef Luca's refusal to acknowledge that anything is garbage. Items designated for disposal are instead categorized as "sleeping ingredients" and stored in special containers until Sous Chef Kombiz can surreptitiously compost them.

Whole Ingredient Usage

We practice whole ingredient usage, though this sometimes manifests as Pastry Chef Aiden incorporating vegetable tops into pastries because "they look like little trees." The resulting flavor combinations have been described as "surprisingly not terrible" by multiple diners.

Energy Conservation

Our kitchen's energy usage is minimized thanks to Beverage Director Ashtyn's tendency to turn off lights to "create better gaming atmosphere," resulting in a 40% reduction in electricity consumption and several minor kitchen accidents.

On-Site Growing

We maintain a small herb garden that began as Chef Luca's "dirt play area" but evolved when the seeds he accidentally dropped while eating snacks began sprouting. We now harvest fresh herbs daily from what the team calls "Luca's Happy Accidents Garden."

Sustainability in action

A Note from Our Sustainability Director

When asked about our environmental impact, Sous Chef Kombiz (who was appointed Sustainability Director primarily because he's tall enough to reach the compost bin) offered this insight:

"Our approach to sustainability developed organically from necessity. When your Executive Chef insists on saving apple cores because they 'might be sad in the trash,' you quickly develop creative repurposing strategies. We've found that our young culinary team's natural tendency toward conservationborn partly from genuine environmental concern and partly from not understanding the concept of wastehas resulted in practices that established restaurants are now trying to implement deliberately."

We invite you to experience our unique approach to sourcing and sustainability during your Maternal Reverence dining experience, where ingredients selected by discerning (if occasionally jam-covered) hands are transformed into expressions of culinary artistry.
